How to Sell Sake in the Community

If you ask me if I enjoy having cocktails, my answer would be no. But that’s my personal preference. Develop sake and shochu cocktails at the restaurant and sell it. These cocktails are actually more popular, so I even have a “Sake Bomb” (a mix of hot sake and beer) on the menu. Other popular cocktails on the menu are the “sake-tini” using nigori (unfiltered)sake, and shochu mojitos.
What’s important here is that I used sake and shochu as base for the cocktails. It is about showcasing the many ways you can enjoy them other than having them straight, so people can gradually learn their flavors.
The reason why sushi became so popular in America is, without any dispute, because of the new-wave creation of “California Rolls,” although it was looked down as not being authentic by many sushi chefs from Japan. But this contributed to the increase of sushi fans, bringing in customers to the traditional nigiri-only (i.e., no rolls) and chef’s-special-only venues. If the California-style sushi, such as spicy tuna rolls and shrimp tempura rolls, disappeared from the current venues, the sushi fan base would probably diminish to 1/10 or even 1/20 of its current scale. No doubt this would eradicate the currently popular sake and shochu markets.
It is my belief that those selling sake and shochu should make efforts to “localize” when recommending them.



地域に合った酒の売り方

個人的にカクテルを飲むかと聞かれれば答えは「ノー」だ。しかし、それは私個人の嗜好であり、レストランではもちろん日本酒や焼酎カクテルは開発し販売している。むしろ、これらの日本酒・焼酎カクテルの方がうけが良く、熱燗とビールを混ぜた「サケボム」もメニューに載せているくらいだ。また、にごり酒を使ったカクテル、サケティーニ、焼酎ベースのモヒート(ミントとライム、もとはラム酒がベース)などは飛ぶように売れる。
重要な事は創作したカクテルになっているベースのアルコールが日本酒や焼酎であり、ストレートだけでなくいろいろな楽しみ方があること、そして徐々に酒本来の味を教えることだ。
寿司が米国でこれほどの市民権を得たのは、まぎれもなく創作すし「カリフォルニアロール」(多くの日本からの職人さんは邪道と決め付けたが)のおかげと言っても過言ではない。これが寿司人口を増やし現在、握り一本、おまかせオンリーの店でも顧客が来るようになったのだ。もし、スパイシーツナロールや海老天ロールなどの創作寿司が現在の寿司店から姿を消したら米国での寿司人口は1/10以下、いや1/20以下にもなるだろう。現在売れている日本酒や焼酎の市場がおそらく消滅してしまうのは間違いない。
日本酒や焼酎に携わってる方は、もっと楽しい日本酒や焼酎の提案をしていくべきである。

Four Key Points of Selling Sake

Dealing with many consumers on a daily basis making proposals on sake, I realize that there are requisite key points. Going over these points alone makes the conversation a success. Roughly speaking, there are four points. The first is aroma. Explain the strength of the product’s aroma (gorgeous or tender) and its characteristics (fruity, floral, alcohol).

The second is body. Explain the product’s sweetness, acid taste, bitterness, and also how it goes down one’s throat.

The third is food pairing. Select the absolute best dish for it. Don’t explain too much, just say it simply: “No other sake goes better with salmon sashimi!”

The fourth is temperature. Explain which temperature setting is best for the product: room temperature, hot, or cold?

Sake manufacturers need to be aware of these points as well. Have a clear vision when developing a product, such as where your target market is, and what you want it to do. “I want my sake to pair with beef steaks like no red wines can” is a good example. And make sure you convey the message in your marketing effort.

Also make sure that these four points are mentioned in your menus, and stressed in your staff training sessions.



日本酒を売る4つのポイント
多くの消費者と日々接し、日本酒について提案しているとやはりセールストークには“落としどころ”というものがある。ここのポイントだけを抑えていれば大体は納得してもらえるものというツボだ。大きく分けると大体4つに集約される。
一つ目は、香りだ。まずは強弱(華やかかおとなしい)と特徴(果実、花、アルコール臭など)を伝える。
二つ目は、ボディー。甘さ、酸味、苦味以外にドライ感などのど越しの感覚を伝える。
三つ目は、食事との相性。ここではこれなら絶対負けない一番の料理を選ぶ。あれこれ言うとポイントがぼけるので、ずばり「サーモン刺身ならうちの酒に敵うものなし!」ぐらいがいい。
四つ目は、温度帯。なぜこの酒は冷(常温)、燗、冷酒が向いているのか?を理解してもらう。
これは、販売者だけに限らず、生産者も商品を開発する際に重要な点である。しっかりとしたビジョンで開発し、これならこの市場、たとえばビーフステーキ料理ならどの赤ワインにも負けない、くらいの日本酒がほしいものだ。そしてそれを伝えるきちんとしたマーケティング資料や商品パンフレットの文面に記載するべきである。
また、この4ポイントをメニューの中に生かしたり、従業員トレーニングにも生かしていただきたい。

Labels on Japanese Sake bottles

While I’ve written repeatedly in the past about the lack of marketing efforts in branding Japanese sake bottles, it’s very disappointing that most breweries still haven’t implemented my suggestions. Every time a new Japanese sake product is introduced, many manufacturers still use labels very different from previous ones.

The bizarre marketing strategy is evident as soon as one picks up a product. Take vodka for example. While colors of the bottles may change, neither the label design nor the fonts of corporate logos ever change. Wine, whiskey, beer, etc., no matter what product you grab, the branding is such that customers immediately recognizes the manufacturer at first glance.

Designs of alcohol products are standardized in this manner. However, why not so with Japanese sake? Considering the cost and time required to launch a product, the lack of standardization in design for marketing purposes is “bizarre” to say the least.

American consumers are very loyal to brands. While the majority of them cannot read Japanese, using a standardized logo design would help consumers who happened to like Junmai to next sample Ginjo, Daiginjo, or Nigori sake.

日本酒のラベルについて

以前にも繰り返し日本酒ラベルのブランディングのマーケッティング不足について話を書いてきているが、未だにほとんどの蔵元が実践していないのは非常に残念なことだ。
日本酒で新商品がでるたびに以前のラベルと全く違う顔のラベルを使ったものを使用している会社が多い。
これは、身近にある商品を手に取ってみるといかに奇妙なマーケッティング戦略であるかが分かるはずだ。たとえば、ウォッカ。ボトルの色を変えることはあってもラベルのデザイン変更や会社ロゴの字体を変えた商品はまずない。ワイン、ウィスキー、ビールどの商品をとっても基本的にその会社と一目でわかるようになっている。
しかし、なぜ日本酒だけはそうでないであろうか? 
一つのブランドを立ち上げるための費用と時間を考えると“奇怪”としか言えない。
米国人はブランドに対してのロイヤルティーが強い。しかも日本語は読めない人が圧倒的である中、統一したブランドロゴデザインを使用することで、純米を気に入ってくれた人は次は同じブランドの吟醸や大吟醸、またはにごりを試していくことに繋げていけるはずである。

Expanding consumption areas for Japanese sake

Recently in the U.S., wine discount stores like BevMo and Total Wine and More, etc., are prosperous. Also, rural areas have local large liquor stores that sell various alcoholic beverages (tequila, ji-beer (local craft beers), champagne, whiskey, etc.) in addition to wine. When I went to Las Vegas last week, I stopped by the largest local liquor chain store, where I was surprised to see the very limited selections of Japanese sake. With various foreign tequilas, wines, and ji-beer lining the shelves, why were there so little selections of Japanese sake offered? Also, the few selections available were without tages and lost in the “Asian” alcoholic section.

The question I’m most often asked is, “This sake is delicious. Where can I buy it?” However, as of yet, the only answer I can provide is our restaurant. I’m also surprised to see customers who wish to purchase by the bottle.

Over ninety-percent of Japanese sake and shochu consumption takes place at Japanese restaurants. However, as long as this is the case, the market will not expand. Japan-affiliated markets are available only in some major cities. To have Americans consume sake and shochu “at home,” it is necessary for these products to be distributed more and more to specialty liquor stores and their staff trained.

酒の消費現場の拡大

最近米国ではBevmoやTotal Wine and Moreなどのワインディスカウント店が繁盛している。また地方に行くと地元の大型リカーショップ店があり、これらの店にはワイン以外にありとあらゆるアルコール飲料(テキーラ、地ビール、シャンペン、ウィスキー等)が陳列されている。先週ラスベガスに行った際にも地元最大のリカーチェーン店に足を運んでみたが、日本酒の種類の乏しさに唖然とした。海外産のテキーラやワイン、地ビールがこんなにあるのになぜ日本酒がこんなに少ないのか、また、何もタグがなく、ただ「Asian」のアルコールの中に埋もれていた。
一番多く受ける質問は、「この酒美味しいですね、どこで買えるのか?」である。しかし、現状としては当店のレストランのみ、ということしか言えない。ボトルで購入したい、という顧客の多さには驚くばかりだ。

日本酒や焼酎の消費現場の9割以上が日本食レストランだ。しかし、これを変えない以上市場は広がらない。日系マーケットは、ほんの一部の大都市にしかなく、米国人に「家庭で消費」させるには、もっともっとこのような専門リカー店に卸し、彼らを教育していく必要があるのではないだろうか。

Communicate the appeal of sake to customers

let’s consider when the appropriate timing is and how to communicate the appeal of Japanese sake in a way that leads to sales.

Consider who the message is directed to
Are chefs, servers, and bartenders trained appropriately? Training the staff to thoroughly understand why a brand of sake tastes delicious and why customers should try it is important because a single try will not be sufficient to understand even ten percent of the appeal of a brand. Therefore, please have staff try the sake paired with the cuisine.

Timing
Of course, a good place to start would be to have the servers change their ordering from “What can I get you to drink?” to “It’s cold outside, would you like to try some hot sake?” This suggestion alone is a major difference.

Content
Speak informatively to customers in a way that generates a response like “Oh really?” For example, “How about AAA, a dry and refreshing sake from Niigata that goes great with sushi?” Or “Would you like to try BBB, a brand of sake from Akita that has body and goes great with teriyaki?” The point is to word the recommendations into easy-to-understand sales pitches that makes customers want to try the brand. Offer two to three different brands that range from reasonable to mid-range prices.



日本酒の魅力をお客様に伝える
新年明けましておめでとうございます。今年もどうかよろしくお願い申し上げます。

どのようなタイミングで日本酒の魅力を顧客に伝え、販売につなげるかを考えてみたい。

伝える人は誰なのか
板前、サーバー、バーテンダーなりに適切なトレーニングをしているか。この酒は美味しいのかまたは試すべきをしっかりと勉強させること。単独で飲んだだけでは、一割もその酒の良さが理解できないので、必ず料理と合わせ試飲をさせること。

タイミング
やはり、サーバーがドリンクオーダーを取る時に顧客に「お飲み物をいかがいたしましょうか?」という一言を、「寒いので美味しい熱燗は、いかがですか」と変えてみること。この一言で大きな違いが生まれる。
内容
とにかく簡潔に「あっそうなの!?」と思わせるトークをする。たとえば、ドライですっきりしていてとてもスシに合う新潟のAAA銘柄はいかがでしょうか?または、照り焼きなどに合うボディーがある秋田のBBB銘柄はいかがでしょうか?など、お客に分かりやすく、トライしてみたくなるセールストークを考える。値段も手ごろなものと中間くらいの試しやすいものを2~3銘柄オファーすること。

Casual Pairing of Sake

In this issue, I’d like to report on a secret to enhance pairing of Japanese cuisine with sake.
First, please have three brands of Japanese sake with very different properties.

For example, select Junmai Daiginjo, Tokubetsu Junmai, and Junmai Kimoto from different regions.
Glasses used for the three sake brands must have the same shape. Chill the sake in the refrigerator at approximately 55 degrees F for three hours prior to serving.

As for the cuisine, they can be prepared in advance if time allows. If not, if you want to try several different dishes to compare, then take out is recommend. For example, trying Chinese and Italian cuisine (avoid foods strong in flavor or garlic) is fun.

For the order of sampling, be sure to start with sake made from rice with the highest milling: from Daiginjo – Tokubetsu Junmai – Junmai. The most important aspect of sampling sake is to sip the sake, sample the cuisine, then drink the same brand of sake again.
If umami or a wide range of rich flavors are detected, then the pairing is considered a success. Also, if the appetite increases, this is also a good outcome.
Japanese sake goes surprising well with unexpected dishes (like cheese or steak), so please try pairing without biases for interesting discoveries.


気軽に日本酒ペアリング

今回は、ちょっとした心がけで日本酒と料理のペアリング能力が上がるコツを教えたい。
まずは、なるべく性質の違う日本酒3銘柄を用意していただきたい。
たとえば、純米大吟醸、特別純米、純米生酛で全く違う産地のものを見つけてみる。
3銘柄の酒は必ず同じ形状のグラスを使うこと。その際、3時間くらい冷蔵庫に保存し、55度Fくらいになるようにしておく。
さて料理だが、時間のある人は料理を自分で作ってもいいし、違う種類のものを複数食べ比較したい場合はテイクアウトを勧める。何も日本食に限らず、たとえば、中華、イタリアンなど(あまりスパイシーなものやニンニクの強いものは避ける)で試すのも面白い。
。飲み食べる順番は大吟醸-特別純米-純米といった具合に高い精米歩合のものから飲んでいくこと。そして飲み方で一番重要なことは、日本酒を一口飲んでから料理を食べ、またほんの少し同じ酒を飲むこと。酒だけで飲んだ時と食べた後に飲んだ同じ酒の口の中での変化を感じとっていただきたい。
旨みやコクの広がりが感じられればそのペアリングは良いと判断できる。また、食欲を増進させる感覚を与えてくれるものも良い。
日本酒は意外なもの(チーズやステーキなど)にも合うので決して偏見を持たずにペアリングしてみると面白い発見ができる。

“American customers are desiring to enjoy sake”

American customers who come to Japanese restaurants anticipate enjoying cuisine and beverages not available in general American restaurants or supermarkets. According to a previously publicized survey, 70 American customers asked what they most look forward to at a Japanese restaurant said they “wanted to enjoy Japanese sake.” In reality however, most American customers end up ordering Japanese beer or house sake.
Here, we explain how to sell Japanese sake without the presence of staff knowledgable about sake or sake sommelier.



1. Does the name of the sake brand, regardless of it’s price, characteristics of the flavor, and pairing recommendations with menu items (sales points) listed in the menu?
Example) XXsake Junmai Ginjo Nagano prefecture
An exquisite sake presented by a sake brewer with over 300 years of traditions. A fruity aroma very unique for a Japanese sake and balanced acidity greatly enhances the delicious flavors of richly flavored meat dishes. Pairing recommendations are the Duck marinated with miso, Cod marinated with kasuzuke.

2. Are sample portions offered in small quantities for tasting? The purpose is to review sales by the glass at reasonable prices for customers to try the sake. If sake is sold by the bottle at approximately $50 to 70, customers won’t feel like sampling it, so offering glasses at $5~8 or sampler sets is recommended.

“アメリカ人顧客は日本酒を飲みたがっている”

日本食レストランにくるアメリカ人顧客は、普段アメリカのレストランやスーパーで体験できない料理や飲み物を期待し来店する。以前行ったアメリカ人70人に対してのアンケート調査によると日本食レストランに期待することのベスト5には「日本酒を飲みたい」としている。しかし、現実にはほとんどのアメリカ人は日本のビールやハウス酒を注文するに留まってしまっている。
日本酒の知識にたけた従業員や利き酒師が居なくても日本酒をもっと売る方法を説明したい。

<店側の取組みとして>
① メニューに日本酒の名前、価格のみならず味の特徴、食事とのペアリング(セールスポイント)が書かれているか?
例)XX酒  純米吟醸  長野県
  300年の歴史を持つ蔵が贈る絶品。日本酒とは思えない果実のような香りとバランスのとれた酸味が肉料理などのこってりとした食事の旨さを引き出してくれる。お勧め料理は、鴨の味噌漬け、ぎんだらの粕漬け。

② 顧客が試しに飲んでもよい容量でサーブされているか?要は顧客がトライしやすいグラス売りや価格帯になっているかをみてみる。ボトル売りのみで単価50ドル~70ドル前後だけの品揃えでは少し試しに飲んでみようという気にはなれないので$5~8でのグラス売りまたは酒サンプラーセットをお勧めする。

Japanese Sake and Shochu Cocktail

It's somewhat wasteful to use a high quality local regional sake for a cocktail, but if you use one that doesn't have too much of that full or rich taste when drank alone or doesn't have the distinctive smell of rice that many Japanese sakes have, you can make cocktails by adding fruits or syrups that brings out a surprising deliciousness.
For this issue, let me introduce you to sake and shochu cocktails that are also easy to make at home.

Nigori Sake and Peach Juice
3 oz. nigori sake
1 oz. peach juice (nectar family)
0.5 oz. peach syrup
Mix the above items with ice, and pour into a well chilled martini glass.
Its look will also be pink and popular cocktail with the ladies.

Pomegranate Martini with Japanese Sake
2 oz. Sake
1 oz. Shochu
1 oz. pomegranate juice
0.5 oz. pomegranate syrup
Mix the above items with ice and shake well in a shaker. Pour into a well chilled martini glass. It has the distinctive sourness and bitterness of pomegranate that is a cocktail fit for adults.

Shochu Grapefruit Mojito
2 oz. shochu
1 oz. sake
0.5 oz. yuzu juice with no salt
7-8 mint leaves
0.5 oz. syrup (ratio of 2 sugar to 1 hot water. Stir until completely dissolved and chilled until it reaches
room temperature)
Add the above items and grind down the mint with a muddler. Add ice and pour into a glass and dilute with club soda.
The fresh aroma of yuzu, grapefruit and mint is the characteristic. Caution is needed due to tendency to over drink.


日本酒と焼酎のカクテル

高級地酒をカクテルとして使うにはもったいないが、単独で飲んであまり味のふくらみやコクのないもの、または日本酒独特の米臭さのあるものは、フルーツやシロップを入れカクテルにすると以外な美味しさを演出してくれるものである。
今回は、家庭でも簡単にできる日本酒と焼酎のカクテルをご紹介しよう。

にごり酒とピーチジュース
3 oz. にごり酒 
1 oz. ピーチジュース(ネクター系)
0.5 oz. ピーチシロップ 
上記の材料と氷を混ぜ、良く冷やしたマティーニグラス注ぐ。
見た目もピンクで女性うけするカクテル。

日本酒のザクロマティーニ
2 oz. 日本酒 
1 oz. 焼酎
1 oz. ザクロジュース
0.5 oz. ザクロシロップ
上記の材料と氷を入れ、シェイカーで良く振る。良く冷やしたマティーニグラスに注ぐ。ザクロの独特の酸味と苦味がある大人向きのカクテル。

焼酎グレープフルーツモヒート
2 oz. 焼酎
1 oz. 日本酒
0.5 oz. 無塩ユズジュース
3 oz. グレープフルーツジュース
7~8  ミント葉
0.5 oz. シロップ(砂糖2に対してお湯1の割合。完全に溶けるまで混ぜ、常温になるまで冷ますこと)
上記材料を入れ、マドラーでミントをすり潰す。氷を入れ、グラスに注ぎ、クラブソーダで割る。 
ユズとグレープフルーツ、ミントのさわやかな香りが特徴。ついつい飲みすぎてしまうので注意が必要。

For this issue, let me introduce you to sake and shochu cocktails that are also easy to make at home.
 
Nigori Sake and Peach Juice
3 oz. Nigori sake
1 oz. peach juice (nectar family)
0.5 oz. peach syrup
Mix the above items with ice, and pour into a well chilled martini glass.

今回は、家庭でも簡単にできる日本酒と焼酎のカクテルをご紹介しよう。

1 oz. ピーチジュース(ネクター系)
0.5 oz. ピーチシロップ 
上記の材料と氷を混ぜ、良く冷やしたマティーニグラス注ぐ。

2 oz. 日本酒 
1 oz. 焼酎
1 oz. ザクロジュース
0.5 oz. ザクロシロップ
上記の材料と氷を入れ、シェイカーで良く振る。良く冷やしたマティーニグラスに注ぐ。ザクロの独特の酸味と苦味がある大人向きのカクテル。焼酎は、韓国系のジンロ焼酎がベスト。

焼酎グレープフルーツモヒート
2 oz. 焼酎
1 oz. 日本酒
0.5 oz. 無塩ユズジュース
3 oz. グレープフルーツジュース
7~8 ミント葉
0.5 oz. シロップ(砂糖2に対してお湯1の割合。完全に溶けるまで混ぜ、常温になるまで冷ますこと)
上記材料を入れ、マドラーでミントをすり潰す。氷を入れ、グラスに注ぎ、クラブソーダで割る。 
ユズとグレープフルーツ、ミントのさわやかな香りが特徴。ついつい飲みすぎてしまうので注意が必要。
