Sake Nation “NON GMO Certification: Part 3”

This report is a continuation from the last report, the last report on NON GMO certification.
Currently, many non-Japanese consumers worldwide enjoy Japanese sake and cuisine because they like Japan, know friends and family associated with Japan, have a working relationship with Japan, or for various other reasons.
These consumers enjoy sake during meals like wine. Of course, some consumers enjoy sake for its health benefits or simply for its delicious flavor.
However, consumers with such preference are very few according to non-Japanese nationals worldwide. Thinking of ways to entice other non-Japanese consumers to try Japanese sake and cuisine will be crucial to ensure the future of Japanese sake.
Overcoming the language, religious, racial, and dietary barriers (taboos) is crucial for Japanese sake to become a true internationally consumed alcoholic beverage.
One way for sake to become a true internationally consumed alcoholic beverage is to attain Kosher, vegan, and NON GMO certification.
“Safety, Security, and Purity.” Qualities expected for food products by Japanese nationals are ’visualized’ for all consumers by attaining this international certification.
Reliability is earned by attaining thorough certification from third parties. This certification could also be the first step to lower the threshold to introduce the appeal of Japanese sake flavors to consumers with low interest in Japanese sake.
Of course, there are various other strategies as well. However, I believe it’s important for Japanese sake to be consumed overseas to visualize the appeal of Japanese sake.

前回からの続きになります。今回でNON GMOのお話は最後となります。
今、世界で日本酒を飲んでくれているノンジャパニーズの方々は、日本が好きだったり、友達や家族に日本に関係する人がいたり、仕事で日本と関係があったり、様々な理由で日本食を食べてくれています。
その中で、ワインと同じような扱いで日本酒を食中酒として飲んでいただいております。もちろん日本食が健康に良いという理由や、単純においしいという理由で選んでくれる人もいます。
ただ、まだまだ世界のノンジャパニーズの人たちの人口からすると、こういった嗜好の方々は圧倒的に少なく、それ以外の普通のノンジャパニーズの方々にいかにして日本酒や日本食を飲んだり食べたりしてもらえるか、これを考えていかなければ日本酒の未来はありません。
言葉の壁を越え、宗教や人種の壁を越え、そして食の禁忌や嗜好の壁を越えていく事こそが日本酒が真の国際酒となるのです。
そのための方法の1つがコーシャやヴィーガン、そしてNON GMOなのだと思います。
日本人にとっては当たり前の「安全、安心、純粋」を「見える化」したものがこういった国際認定になります。
第三者によって、しっかりと認定されることで信頼を得る。そうしてあまりまだ日本に対して興味の薄い人達にも日本酒の魅力を伝える最初のステップを低くすることが出来ると信じています。
もちろん、まだまだたくさん作戦はあるかと思いますが、海外で飲まれる日本酒はもっと日本酒の持つ素晴らしさを見える化していくべきだと思います。

Sake Nation 159 “NON GMO Certification: Part 2”

This report is a continuation of the previous report that described the reason for acquiring the international vegan certification “NON GMO” for Japanese sake. Especially in the U.S. market, many products labeled “NON GMO” expectedly line the shelves in the food section at Whole Foods and natural markets, etc., signaling increasing consumer demand for natural products.
Japanese sake is produced using “rice” harvested in Japan and “water” from natural spring water, well water, etc., as the food ingredients. Since Japan strictly manages genetically modified food products, the sake rice we use contains no genetically modified rice, which is common practice. Due to this common practice producing Japanese sake, we acquired NON GMO certification following kosher and vegan certifications.
We Japanese nationals living in Japan are not familiar with genetically modified food products, nor do we hardly hear any news reported on genetically modified food products.
However, a certain demographic of consumers reject genetically modified food products in the U.S. and Canada, etc. These consumers are not familiar with the food ingredients used to produce Japanese sake in the first place, thus they don’t think to purchase Japanese sake.
Japanese restaurants increased dramatically in numbers since UNESCO designated Japanese cuisine as intangible cultural heritage. How can we thoroughly serve customers of Japanese restaurants and pique the greater percentage of customers’ interest in Japanese sake? One strategy is to obtain “NON GMO,” kosher, and vegan certifications.

酒豪大陸159「NON GMO認定 その2」

前回からの続きになります。
日本酒で「NON GMO」の国際認定を取得した理由を前回は述べました。
特にアメリカ市場では、ホールフーズマーケットやナチュラル志向のマーケットなどを見てみる、食の分野では「NON GMO」表記の商品が当たり前に並び、それを嗜好するお客様も確実に増えていると感じていました。
日本酒は日本で栽培された「米」と、天然の伏流水や井戸水などの「水」を原料とします。
日本は遺伝子組み換え商品を厳しく管理していて、私達が使う酒米では遺伝子組み換えされた米などはありませんし、それが当たり前になっています。
そういった日本酒の状況もあり、コーシャ、ヴィーガンに続いて、NON GMO認定を取得しました。
私達、日本に住む日本人にとっては遺伝子組み換え食品は当たり前の日常ではなく、ニュースなどにもほとんど遺伝子組み換えという言葉は出てきません。
しかし、アメリカやカナダなど北米では遺伝子組み換え食品を取りたくないと考える一定の層があり、そういった方々は日本酒はそもそもどうなのかわからないので、買うなど考えていない人が圧倒的です。
日本食レストランが和食がユネスコの無形遺産登録になり、その後大きく増えましたが、そこに来るお客さんはもちろん大事にしながら、それ以外のもっと多い割合を占めるお客様をどうやって日本酒に振り向かせるか。その手段の1つが「NON GMO」やコーシャやヴィーガンなのだと思います。

Sake Nation “NON GMO Certification: Part I”

As the impact from the novel COVID-19 coronavirus spreads worldwide, the world continues to face major challenges in the aftermath of the pandemic. As the vaccination starts, a ray of hope is finally visible.
In the midst of this coronavirus era, Japanese sake was certified as “NON GMO” for the first time. This time, Japanese liquor was also certified as NON GMO. Nearly two years of preparation and application finally resulted in an international certification by the U.S. (https://www.nongmoproject.org/).
Why is Japanese sake certified as “NON GMO?”
Our sake brand was certified as “Kosher” (compliant with Jewish dietary laws) in 2013, the second Japanese sake brewery to be certified Kosher following “Dassai” of Yamaguchi prefecture.
Obtaining kosher certification widened our opportunities to reach a wider demographic of consumers beyond the certain group of foreign nationals interested in Japanese cuisine or Japan.
As the Kosher market expands, especially in the U.S., other renowned sake brands like Hakkaisan, Kikusui, etc., were also certified Kosher.
Afterwards, when we asked local American consumers who frequent Kosher markets we were asked several times in return why Japanese sake is not certified “Vegan” also, since sake is produced from only rice and water.
Afterwards, the first Japanese sake brand received international Vegan certification in 2019.
In the midst of this flow, the U.S. market is sensing heightened demand for health-conscious, pure food products.

酒豪大陸「NON GMO認定 その1」

新型コロナウィルスの被害が世界的に広がる中、世界が今大変な苦労をしています。
しかし、ワクチン接種も始まり、一筋の明るい希望の光が見えてきました。
そんな、コロナの時代ですが、日本酒で初めて「NON GMO」の認定を受けることが出来ました。なお今回はリキュールでも認定を受けております。
2年近く準備と申請に時間がかかりましたが、アメリカのhttps://www.nongmoproject.org/
からの国際認定をいただきました。
なぜ日本酒が「NON GMO」認定を受けたのか。
そもそも弊社は2013年にユダヤ教の食事規定である「コーシャ」の認定を受けました。
これは、山口県の「獺祭」に続いて、日本の酒蔵では2番目の認定でした。
コーシャの認定を受けることで、今まで日本食や日本に興味のある一定の外国人以外の方々に日本酒を広めていける可能性が広がりました。
アメリカでは特にコーシャマーケットが広がっていて、その後、八海山や菊水などの有名銘柄もコーシャの認定を取得していきます。
その後、コーシャマーケットに行くアメリカ人の皆さんに聞いてみたところ、日本酒は米と水だけで造るのだろうけど、なぜ「ヴィーガン」の認定を取らないのか、と何度か言われました。
その後、2019年に世界初の日本酒でのヴィーガン国際認定をいただきました。
その流れの中で、確実にアメリカの市場では健康志向、純粋志向が高まっていることを感じてきました。

Sake Nation Kosher Certification Part 5

Just as I mentioned in the last column, Nanbu Bijin cleared different hurdles to receive Kosher certification for 2 types of liquor of Japanese sake and plum wine to lead the way. For the announcement of our company receiving certification, the first announcement was made in the Holy Land of Judaism, Israel.

Next, focusing on Israelis living in Los Angeles and New York in the U.S., we had the Kosher announcement and tasting events. We are planning to also have these kind of tasting events in Japan in the future.

The reason why Nanbu Bijin wanted to apply for Kosher certification in the first place was the Great East Japan Earthquake and at that time we received much support from Israel including Rabi Edelhi. Also as a company that exports, sake is known to be reliable and safe, but I was thinking for a long time what might be needed to make it possibly more acceptable worldwide as a guarantee or decision making factor. During such a time I met up with this “Kosher.”

Even though Japanese sake has the image of being healthy or safe and reliable worldwide, that image is very much limited to foreigners that know Japanese or Japan very well. So you may say, to conclusively prove that abstractive healthy image was the motive to challenge this Kosher certification.

For a small country brewery like Nanbu Bijin to receive certification when the hurdle was first so high to reach the Kosher level, I believe that there will be an increase of breweries that will plan to receive Kosher certification in the Japan Sake making industry from now on.

I believe that Kosher sake will break down the wall of religion, put aside the concept of Japanese food, and be the key to make Japanese sake spread across the world with a true meaning. This might be a story slightly ahead in the future instead of right away, but I will dream that such a time will come and continue to work hard to achieve that.


酒豪大陸「コーシャ認定 その5」

前回のコラムでもお話した通り、様々なハードルをクリアしながら南部美人は日本酒と梅酒をはじめとするリキュールの2種類でコーシャを取得しました。

当社のコーシャの取得に関しての発表は、一番最初は、ユダヤ教の聖地であるイスラエルで発表をさせていただきました。

続きまして、アメリカのロサンゼルスとニューヨークでアメリカ在住のイスラエル人を対象としたコーシャの発表会と試飲会を行わせていただきました。今後は日本国内でもこのような試飲会を行っていきたいと計画しています。

南部美人がそもそもコーシャの認定を受けようとしたきっかけは、東日本大震災であり、震災時にラビのエデリーさんはじめ、イスラエルから多数の支援をいただきました。さらには輸出をしていく会社として、日本酒は安心、安全と言われているけど、その保障というか、確証的な何かがあれば、もっと世界で認知されるのではないかと、ずっと思っていました。そんな時に、この「コーシャ」に出会ったのです。

世界的に日本酒は健康とか安全、安心のイメージがあるものの、それはまだまだ日本人や日本を良く知っている外国人に限定されるイメージで、その抽象的な健康イメージを確証的なものにしたかったのが、このコーシャの認定に挑戦した動機ともいえます。

最初はハードルが高かったコーシャも南部美人のような地方の小さな酒蔵が認定されたことで、これから日本酒造業界ではコーシャの取得を目指す蔵が増えてくると思います。

コーシャのお酒は宗教の壁を打ち破り、和食という概念を取り払い、真の意味で日本酒が世界へ浸透していくカギになると思っています。それは今すぐではなく、ちょっとだけ先の未来の話かもしれませんが、そんな時代が来ることを夢に見ながら、これからも頑張っていきたいと思います。

"Kosher Certification Part 3"

I think there are very few people that know how the kosher certification is done. Kosher mark means "the food is sanitary", "manufacturing process is done appropriately", "all ingredients of the product meet the standards and are good for the consumers", "guarantees that the product does not use dairy products for ingredients and it is dairy allergy free" etc.

Kosher certification for meats and dairy products are very difficult and have high hurdles for that reason, but regarding the "Japanese sake" or "liqueur" that was certified for Nanbu Bijin this time originally doesn't use dairy products, doesn't use any animal products like meat etc as an ingredient and felt that we would get certified fairly smoothly.

However, if you look across Japan, there are only a few companies besides Nanbu Bijin that have received Kosher certification for Japanese sake. Also there is only one company in the U.S. that manufactures Japanese sake that has Kosher certification. For liqueur, umeshu (plum wine) by Choya is sold as Kosher only in Israel, but is not Kosher in Japan or the U.S. etc. Liqueur, specially regarding umeshu, probably Nanbu Bijin is probably the first to sell as Kosher in the world.

In addition, for the two liquors of Japanese sake and liqueur, Nanbu Bijin is probably the only company in the world that has Kosher certification.
For Kosher certification, it starts from having the rabbi who is a leader of Judaism review the ingredients and manufacturing steps. I would like to write the details of this in the next issue.


酒豪大陸「コーシャ認定 その3」

コーシャの認定がどのように行われるか、知っている人は大変少ないと思います。コーシャマークが意味するのは「その食品が衛生的であること」「製造過程が的確に管理されていること」「製品の原材料全てが規定を満たし、消費者のために良いものであること」「原材料に乳製品を使用せずに作られた、乳製品アレルギーフリーの保証」などがあります。

肉や乳製品でのコーシャの認定は、そのために大変難しく、高いハードルがありますが、今回南部美人が認定された「日本酒」や「リキュール」に関しては、もともと乳製品は使っていませんし、原材料に肉などの動物性のものは一切使っていないため、比較的認定を受けやすいと思っていました。

しかし、日本国内を見渡すと、コーシャ認定を受けている日本酒というのは、南部美人以外にも数社しかありません。さらにアメリカで生産される日本酒も1社しかコーシャの認定を受けていません。リキュールになると、CHOYAの梅酒がイスラエルのみでコーシャで販売していますが、日本やアメリカなどではコーシャではありません。リキュール、特に梅酒に関しては、世界中でコーシャで販売しているのは南部美人がおそらく初めてになります。

さらに、日本酒、リキュールの2種類のお酒でコーシャの認定をされているのは、世界中で南部美人だけとなります。

コーシャの認定は、まずはその原材料や製造工程をユダヤ教の指導者であるラビに見てもらうところから始まります。詳しい様子などについては次回に書きたいと思います。

Sake Nation "Kosher Certification Part II"

In last issue's column, we mentioned: "On April 17th 2013, by a certification body called Chabad of Japan, Nanbu Bijin received a certification of “Kosher” to certify that their products are safe and trustworthy based on the dietary food standards of Judaism." We also explained what Kosher is in the last issue, but in reality what type of Kosher foods are OK to eat and which are not according to Judaism religion?

First, regarding acceptable Kosher meats, basically grass-eating animals that are also ruminants (animals that have two or more stomachs) are the conditions.

Cows and lamb are OK, but pigs or rabbits cannot be eaten. Also, blood must be completely drained. Meat that is prepared by their standards can only be eaten.

In other words if it is cow or lamb, you cannot eat it whatever way you want and you are not able to eat it unless it is prepared according to the rules. Since draining the blood is one of the main rules, Japanese will probably think that Kosher beef etc have a dried-out texture.

In addition, it is OK to eat fish and shellfish etc with fins or scales, but you cannot eat shell fish like shrimps or crabs etc, clams, octopus and squid etc. Since scales are not noticeable on unagi (fresh water eel), that cannot be eaten also.

There are regulations for each food, but also there are regulations for food combinations and it is forbidden to have beef with dairy products and using animal fat. To put it strictly, even cooking utensils and the kitchen need to be separated, so it's challenging for the person that has to cook. Within these food combinations, a salami pizza or chicken cream soup do not exist.

I have explained there are several strict rules to be classified Kosher, and I would like to write how this certification is carried out in the next issue.

南部美人では、2013年4月17日に、CHABAD OF JAPANという認定機関により、ユダヤ教の食餌規定にのっとり、安全、安心な食材として認定される「コーシャ(kosher)」の認定を受けました、と前回のコラムにも書かせていただきました。そしてコーシャとはどのようなものなのか、前回は説明をさせていただきましたが、実際に、ユダヤ教の教えであるコーシャの中で食べてもいいもの、ダメなものはどんなものがあるでしょうか。

まず、コーシャで食べて良い肉類ですが、基本的に草食動物であり、且つ反芻動物(胃を二つ以上持つ動物)であることが条件となります。牛や羊はOKですが、豚やウサギは食べることが出来ません。さらに、完全に血抜きされた。一定の食肉処理を施された肉のみ食することが出来ます。つまり、牛や羊なら、なんでも食べられるわけではなく、規定にそった処理をしなければ食べることが出来ません。血抜きが大きな原則の1つにありますので、コーシャの牛肉などは、どこかパサパサしている感じが日本人はすると思います。

さらに、魚介類などでは、ヒレやウロコのあるものは食べても良く、エビやカニなどの甲殻類や貝類、タコ、イカなどは食べることが出来ません。ウロコが目立たないという理由でウナギも食べられません。

そして、食べ物自体の規定もありますが、食べ合わせにも規定があり、牛肉と乳製品の食べ合わせを禁じたり、動物性脂を禁じたりしています。厳密にいうと、調理器具や台所まで分けなければいけないとされており、調理する人は大変です。この食べ合わせの中では、サラミのピザなどはあり得ませんし、鶏肉のクリームスープなどもあり得ません。

このように様々な厳しい既定のあるコーシャですが、次回はその認定がどのように行われていくか書きたいと思います。

Sake Nation Kosher Certification Part I

On April 17th 2013, by a certification body called Chabad of Japan, Nanbu Bijin received a certification of “Kosher” to certify that their products are safe and trustworthy based on the dietary food standards of Judaism. Probably many of the Japanese that read this column may not be familiar with the certification of “Kosher”, so I would like to break up my explanation into a few different installments and talk about what we did to receive the certification, why it was necessary to get the kosher certification, and what can be expected in the future. First, I would like to explain what “Kosher” is. Kosher was the world’s first commandment regarding food given by God to the Jewish race and had an original meaning to point out that it means “proper” or “it can be accepted”. In the Bible, Adam and Eve were ordered that they cannot eat the fruit from a tree.

Since then the Jewish have shown a strict self-discipline regarding foods and main rules regarding Kosher are noted in Mose’s 5th commandment. The Jewish based their dietary habits on that commandment and as a result have led healthy lives.

In recent years, Kosher is a byword for “Purity”, “Trustworthy”, “Safe”, “Fine quality”, is acceptable with vegetarians and others besides the Jewish, and especially in the U.S. many people accept Kosher products as “foods that are healthy and trustworthy”. If you look across the Globe, there are over 28 million people that only purchase Kosher certified products, and of that number only a small percentage are Jewish. It is clear that vegetarians or consumers having high consciousness of food select these Kosher products. As you can see, Kosher started being accepted around the globe in recent years, and in the next issue I would like to talk in detail what kind of dietary food standard it really is.

このコラムを読んでいる日本人の皆さんにはあまりなじみの少ない「コーシャ」の認定ですが、その認定に至るまでの経緯や、コーシャの認定がなぜ必要で、これからどのようになって行くのか、などを今回から何度かに分けてお話をしていきます。

まず、「コーシャ(kosher)」とは何かの説明をさせていただきます。
コーシャとは、神によりユダヤ民族に示された、世界で最初の食に関する戒律で、その本来の意味は「正しい」あるいは「受け入れ可能」という意味を指しています。

聖書では、アダムとイブが命の木の果実を食べてはいけないと命令されていました。それ以来、ユダヤ人は食に関して厳しい自己戒律を行い、コーシャに関しての主要な取り決めは、モーゼ五書に示され、ユダヤ人はそれに従った食生活をおくり、結果、健康的な生活を送ってきました。

近年コーシャは「純粋」「安心」「安全」「良質」の代名詞となり、ユダヤ人以外のベジタリアンなどにも受け入れられ、特にアメリカでは多くの方々が「健康的で安心な食材」と、このコーシャを認識しております。

世界各地で見ると、コーシャ認定された商品のみを購入するのは2800万人以上おり、このうちユダヤ人の割合はごくわずかで、ユダヤ人以外の安心、安全を求めるベジタリアンや食の意識の高い消費者がこのコーシャの商品を選んでいることがわかります。

このように、世界中で近年、認識され始めたコーシャですが、実際にどんな食餌規定なのか、次回詳しくお話をしていきたいと思います。
