This is the first recipe I followed from skinnytaste.com and I'm pleased to say that the nutrition information listed on the recipe is accurate. It's almost hard to believe food this rich and filling is so low calorie at 240 a roll! With two rolls and a side of veggies you will be stuffed. I've been packing these lasagna rolls for lunch all week and they are just as good reheated as leftovers.
For the red sauce I roasted and then peeled tomatoes, half an onion, and red and yellow bell peppers before tossing them in a blender with garlic salt. Yum!
