This month’s “Megumi’s Garden Lunch” menu was “Tofu Chanpuru,” which is stir-fried tofu and vegetables. This is a dish from Okinawa Island, the southern part of Japan, and chanpuru means to “scramble up” in the Okinawan dialect. We “chanpuru-ed” some tofu, eggs, and vegetables up to make a very nutritious dish!
