タケノコは皮を剥いて茹でる

タケノコのシーズンです、料理番組やWebを検索すると、タケノコは「皮ごと茹でる」
との記事が目立ちます。
料理番組でも、したり顔で「皮をむかずに茹でて」などと話しています・・・・
 
私は皮は全部剥き、場合によっては切り分けて茹でます、糠もさほど使いません。
重要なのは、一にも二にも鮮度です。
