その日の朝に搾り、瓶詰めした酒をその日のうちに酒屋へ卸し、その日の内に飲む酒の事です。

火入れをせず、フレッシュな生酒、まさに日本酒のヌーボーなのです。

したがって蔵元から酒屋が近いことが条件ですし、問屋を通さないのもスピードの条件です。
