豊前海で水揚げされた赤エビの干し物です。

殻を取ってあり、そのままで食べることができます。

全国に4万社あまりある八幡様の総本宮の宇佐神宮が有名な宇佐市は
緑豊かな平野と漁業の栄える豊前海に恵まれています。
昔は干しえびの殻を取り除く時に｢叩き棒｣を使用し、その音がカチカチと音がする事から｢かちえび｣と言われ、
勝負事や受験等の｢勝ちえび｣としての縁起物としても今も親しまれている宇佐長洲の特産物です。
