安芸の昔からの漁村海岸でも多くの水産加工所が有ります。その内の一件、小松海産加工所では「鉄干し」を扱っています。
ほとんど知られてない珍味です。フカなどの身を天日干ししたものです。炙って裂いて食べます。味はフグやタラを干した珍味によく似ていますが、水分が残ってますから柔らかいです。塩分が有るので沢山は食べれませんが酒の肴には最高です。

サメ肉、アンモニア臭が有り食べ難いとよく言われてますが
匂いはどうなんでしょう

微妙にはあると思います。でも初めて食べる人に何も言わなければ気が付かないレベルだと思います。美味しいです。
