せっかくの新鮮な葉付の蕗なので、すぐに調理に取り掛かりました。
葉っぱなんて滅多にお目にかかれないので、どう調理しようかと迷った挙句、味噌味の炒め煮と、しょうゆ味の佃煮に。
本体の茎は、下処理をして半分以上は日持ちするキャラブキに、他は厚揚げと一緒に炊いたんと豚肉との炒め煮にしました。
午後1時過ぎから下処理に取り掛かり、上記の5品を作り上げた時は、すでに5時を回っていました。
でもおかげでとっても貴重な蕗料理ができて食卓がリッチになりました~!
