キンシウリが正式の名前のようですが、茹でて実をほぐすと、お素麺のようになります。 そこから「そうめんうり」「そうめんカボチャ」というようです。 炊き合わせと、お酢の物にしました。 歯ごたえがあって、サクサクしていて美味しいですよ。 【コメント欄にも画像あります】
