I just found out that today is National Taco Day in America. Taco Tuesday has been a celebrated holiday of sorts for years which makes today the king of all Taco Tuesdays.

I made garlic tortillas this weekend by mixing grated garlic into the dough. They paired deliciously with Cajun-seasoned sockeye salmon, Beecher's flagship cheese, avocado, tomato, caramelized onions and a splash of lime juice.

A single red bell pepper waited for close to a week on my table as I contemplated what to cook. It was originally intended for salsa. Inspired by a childhood memory, stuffed peppers came to mind. My parents took us to Michigan to visit my grandparents at least once a year when I was growing up in New Jersey. The house was warm on a summer evening, in both color and temperature. With a smile, grandma announced "I made stuffed peppers for dinner," and she pulled out a full tray from the oven. "Yuck," I complained, having never tried one before. I was ten, maybe eleven. "They're not yuck," gram defended with a frown. Instead of making me try new foods my parents prepared forgettable substitutes. Of course, I don't remember what I ate instead. I just distinctly remember thinking the stuffed peppers looked and smelled totally gross. Many years later and out on my own, my shift in perspective and taste left me nostalgic and a touch remorseful. Nowadays, it would mean a lot to me to try one of her stuffed bell peppers.

What happens when I run out o... What happens when I run out of tortillas? Burrito bowls. Summertime comfort food. With the farmer's market in full swing I feel good about buying fresh produce for salsas.
This image has been circulating my social media feeds, but take a look at this burrito bowl. Rice and beans are $2 or less per pound. Ground turkey is $5/lb tops and I bought mine on sale for $2 on the "sell by" date. For about $15 in farmer's market produce I made enough salsa verde for over 10 servings. The specialty cheese I used was most expensive at $1.25 per serving, but grocery stores sell shredded cheese from $3 to $5. The total cost for my giant burrito bowl is $2.90 when I divide the total servings (10) by the total cost. A large black coffee at Starbucks is more expensive than my entire meal. Eating well doesn't have to be expensive.

Pacific cod is one of the leanest sources of protein available at a mere 70 to 80 kcal per 100g (raw weight). Plus, cod is loaded with heart healthy fatty acids and vitamins. A win in my book. I grilled the cod over a cedar plank to add flavor and pair well with the tangy and sweet peach salsa. Add rice and more salsa for a bigger meal.

Pacific cod has a great meaty texture compared to smaller fish. After eating, I felt stuffed to the gills from the protein despite the small amount of calories.

I didn't intend to make this meal so low cal so I balanced it out with a heavier meal later!

Today is Taco Tuesday! Here... Today is Taco Tuesday! Here are some tasty ground turkey tacos.
I've never intentionally celebrated this weekly tradition, but today is Tuesday and I did make tacos. I enjoyed all 3 tacos for just 500 calories.

In an effort to improve my cooking skills and save money, I've been challenging myself to prepare most of my meals from basic ingredients instead of purchasing canned or pre-packaged foods.

I made the corn tortillas with Maseca corn flour, Jacobsen's onion salt, and fresh garlic that I shaved with a microplane and added to the dough. The salsa was created with fresh farmer's market tomatoes, peppers, and onions that I roasted, peeled, and then blended with Jacobsen garlic salt and freshly squeezed lime juice. Each taco is filled with ground turkey seasoned with Jacobsen's garlic salt and freshly squeezed lime juice. Lastly, the cheese is Seattle's famous Beecher's Flagship cheese that I grated myself.

The end result is an explosion of flavor thanks to seasoning with garlic, lime, and salt at every stage: I added garlic and salt to the tortillas, salsa, and turkey, plus I squeezed fresh lime juice into the salsa and ground turkey to create a complementary flavor profile. The garlic and lime work with the tomato, turkey, pepper, and corn flavors without overpowering.

I'd say that the hard work is definitely worth it for delicious tacos! Food doesn't get any better than being fresh, nutritious, and flavorful.
